ALMOND AND BERRY MUFFINS  

Need a healthy snack? These Almond & Blueberry Muffins are easy to make but super healthy.  You can use whatever flour you want, I used buckwheat which is really nutritious.

What you need:
 

 

1 cup flour of your choice (buckwheat, rice, spelt, etc - I used buckwheat)

1 cup almond meal

1 Tbsp baking powder

1 ripe banana

3 large eggs

1/4 cup olive oil

Olive oil spray

1 cup milk of your choice (almond, rice, etc - I used almond)

1 teaspoon pure vanilla extract

1 cup fresh or frozen berries

3/4 cup chopped pistachio or walnuts or almonds (for topping)

**1/2 tsp stevia if you want them sweet

Prep:
 

Preheat oven to 180 degrees C. Line a muffin tin with paper muffin cups and spray lightly with nonstick olive oil spray. 

 

In a medium-sized bowl, whisk together the flour, almond meal and baking powder. Set to one side.

 

In blender or processor mix the banana with the eggs, oil, milk and vanilla. Slowly add the flour and almond meal ingredient mix. Add berries and keep mixing until just combined.

 

Scoop out mixture into each muffin cup. Sprinkle with chopped almonds and bake for approx. 15 – 20 minutes or until golden brown.

 

Leave to cool. Best stored in fridge. Can also be frozen.
