BEET AND COCONUT SMOOTHIE
Beetroot is a powerful superfood. Rich in antioxidants, vitamins and minerals. When eaten they release nitric oxide - beneficial for circulation and can improve athletic performance and lower blood pressure. The leafy green stems are also nutrient powerhouses. I add them to my salads but love them in a smoothie as well. If you really don't like Beet greens raw, you can also steam or sautée them.
What you need:
1 cup coconut water
1 scoop VEGAN or POWER PROTEIN
2 tbsp shredded raw coconut (unsweetened)
1 medium raw beetroot, diced
¼ cup beetroot greens
½ cup blueberries or any berry of your choice (frozen or fresh)
Add coconut water, lemon juice and Power Protein into a blender and blend for a few seconds then add the berries/banana and shredded coconut and blend for a few more seconds.
Lastly, add the beetroot and greens. Blend for 1 minute or until a smooth consistency.
Pour into a glass and let your body soak in all the nutrients!
