CARROT ENERGY BALLS  

A super delicious, healthy snack or dessert that's full of natural goodness, protein and fibre.  YUM!

What you need:

 

1 cup shredded carrot

1 Tbsp fresh finely minced ginger

½ cup shredded coconut (unsweetened)

2 Tbsp Walnut Nut Butter (you can also use Almond)

1 scoop VEGAN or POWER PROTEIN

8 medjool dates (finely chopped)

1 Tbsp cinnamon

Extra water as needed

Prep:

 

Blend all ingredients in a food processor. If the mixture is too dry, add a little water until mixture is more of a dough like consistency. 

 

Or if the mixture is too wet, add more cinnamon and coconut or Protein Powder.

 

Once the mixture is ready, roll into small balls and coat with coconut or a topping of your choice. 

 

Arrange balls on a board and place in freezer to set.
