CHICKPEA AND LENTIL BURGERS 

Chickpeas are a nutritional powerhouse!  They are a great source of protein, high in fibre and phytochemicals.

What you need:
 

1 can lentils

1 can chickpeas

1 cup cooked pumpkin

1 cup cooked zucchini

1 onion, chopped

2 cloves garlic

2 eggs

1 extra egg white

2 cups spelt flour or wholemeal breadcrumbs

Olive Oil

 

Delicious Tahini Sauce

3 Tbsp lemon juice

2 Tbsp water

2 Tbsp tahini

pinch salt to taste

1/2 small clove garlic, minced (optional)

pinch teaspoon cayenne pepper (optional)

 

Whisk all ingredients in a bowl (or blender if you wish) until smooth and well combined.

 

Prep:
 

Fry onions and garlic in olive oil until soft. 

 

Place all other ingredients in processor to make a mash.  Add eggs, onions and breadcrumbs.

 

Form mixture into patties and fry with a small amount of olive oil until brown.

 

Serve with brown rice quinoa, a salad or anything that takes your fancy!!
