BROCCOLI QUINOA SALAD 

Broccoli is what you call a super vegetable!  The health benefits of broccoli have been widely touted, particularly in regard to its potentially protective qualities against cancer.  An easy and highly nutritious recipe that you can have for lunch or dinner.

Ingredients:

 

3 tablespoons hummus (I use Pilpel or you can make your own)

1-2 tablespoon spring water

1 Tbspn olive oil

1 cup lettuce greens (baby spinach, rocket, kale, etc )

1/4 cup sliced cauliflower

handful radishes, sliced

½ an avocado sliced

3/4 cup cooked beans of your choice (if using tinned, rinse thoroughly)

1/4 cup shredded carrots or beets

1 Tbsn chopped almonds

Fresh mint leaves, roughly chopped

Pinch rock salt and black pepper

Juice of 1 lemon (optional) 

 

For extra protein, use chicken, fish or anything you like (I used cubed tofu).​

Method:

Add the hummus, water, olive oil and a pinch of salt and pepper into a bowl and using a fork stir until combined. Taste and adjust by adding a little lemon juice or a little more salt and pepper if you like.

 

In a separate bowl add all greens and then layer the veggies over top. Scatter the mint leaves over top.  Drizzle the hummus dressing over mixture and serve.

 

Makes 2 small bowls or one large bowl
