HEALTHY SWEET POTATO FRIES 

What you need:

2 large sweet potatoes, cut into wedges
2 Tbsp olive oil
1 Tbsp chilli flakes
1/2 tsp cumin
1/4 tsp cayenne (optional)

Pinch rock salt

Home-made Hummus:

2 cups chickpeas (equiv to 1 can - rinse thoroughly if using a can)

1/3 cup tahini

2 Tbsp olive oil

Juice from 1/2 lemon

Prep:

Preheat oven to 220ºC.  Combine olive oil, cumin, chilli flakes and cayenne in a large bowl.  Add sweet potato wedges and toss thoroughly to coat. Make sure wedges are evenly coated.  Line a baking tray with baking paper and spread wedges evenly over tray.   Roast for approx 30 minutes, turning after 15min. 

 

Serve with hummus or a Greek yoghurt dip (or any dip you fancy really).

 

Hummus Prep:

Place all ingredients into a blender and blend until a smooth consistency.  Serve with Sweet Potato Chips, in a salad or any snack of your choice.
