LEMON PRE-WORKOUT ENERGY BITES
These are so simple and easy to make, but a great little pre-workout snack!
They do contain quite a few dates, so should be sweet enough but if you have a real sweet tooth then add a little stevia or similar to your taste.
What you need:
1 cup chopped, pitted dates
1 cups rolled oats or similar
4 Tbsp lemon juice (plus zest of 1 lemon)
1 tsp pure vanilla
If mixture is too sticky from the dates you can add a little extra pre-workout or more oats/flour, etc.
Add everything to a blender/food processor and pulse until a dough like mixture starts to form.
Wet hands and roll into small balls and place on a board or tray. It's up to you if you want to add a coating over the balls - can be a little extra lemon zest, sesame seeds, cacao powder or anything really!
Can be eaten right away or freeze for an hour or so to really set.
Store in fridge or freezer in a sealed container.
