SPICY ROASTED CHICKPEAS
What you need:
2 cups chickpeas, (thoroughly rinsed if using tinned)
1½ tsp olive oil
¼ tsp finely ground black pepper
¾ tsp chilli (optional)
¼ tsp paprika
Pinch cayenne pepper
Pinch rock salt
*You can any herb/spice mix that you like
Pre-heat oven to 450. Pat dry chickpeas and combine with oil and spices in a small mixing bowl and mix until evenly coated.
Cover a baking tin with baking paper and pour in the chickpeas. Shake gently until the chickpeas are layered evenly.
Roast for 10-15 minutes, then toss and roast for another 10-15 minutes or until golden. To get them crispy turn off the oven and let the chickpeas cool in the oven for approx 20 minutes with the door open.
Great little protein snack or added to a salad.
